Champagne is widely acknowledged to be the finest sparkling wine in the world. Using the labor intensive Méthode Champenoise process in which the second fermentation occurs in the same bottle that is eventually sold to the consumer, it is produced using the Chardonnay, Pinot Noir and Pinot Meunier grapes. Most Champagne and Champagne-style sparkling wines age on their lees (dead yeast) for about 1-2 years, but reserve-level wines age typically up to 5 or even 10 years before finishing.
Thornton Winery produces our Brut Reserve using that same Méthode Champenoise process. In fact, we are the first and original winery in Temecula to produce a sparkling wine in this manner, going back to 1988. We typically use both Chardonnay and Pinot Noir grapes, and it ages on its lees for an extended time to produce a complex sparkling wine with fine bubbles and outstanding character. This wine is finished in a Brut level and is one of the most versatile wines to pair with foods: Brut sparkling wines pair beautifully with virtually any food.
Aroma: Lemony citrus, green apple, a hint of spearmint.
Palate: Lemon and light grapefruit, green pear, nice mouthfeel and finishing with a balanced acidity.
Pairing: Appetizers, seafood, salads, and chicken are all common pairings for a Brut sparkling wine and this is no different, but try it with anything and be surprised. Ready to toast your most special occasion or liven up every day.
